Types of Spices

Whole Spices (Sabut Garam Masala)

The base of every pulao, biryani and qorma: black pepper (kali mirch), white pepper (safed mirch), cloves (laung), cinnamon sticks (darchini), star anise (badiyan ka phool) and nutmeg (jaifal). Whole spices keep their aroma far longer than ground spices.

Cardamom: Sabz Elaichi and Bari Elaichi

Green cardamom (sabz elaichi) is the sweet, fragrant pod used in chai, kheer and desserts. Brown cardamom (bari elaichi) is larger and smoky, and adds depth to biryani, pulao and salan.

Ground Spices: Haldi, Garam Masala and More

Turmeric (haldi) powder gives colour and warmth to every salan. Garam masala powder is a ready blend of whole spices for finishing curries, and finger chips masala is a spicy sprinkle for fries and snacks.

Herbs and Teas: Peshawari Kahwa, Lemon Grass and Moringa

Peshawari kahwa is the classic green tea for a warm cup after meals. Lemon grass makes a fresh, citrusy tea, and moringa powder is a green leaf powder added to drinks and smoothies.

Whole vs Ground Spices: Which Should You Buy?

Whole spices keep their oils and aroma for much longer, so they stay fresh for months and give the strongest flavour when added to hot oil or ground just before cooking. Ground spices are quicker to use but lose their aroma faster. Buy whole spices like laung, darchini, kali mirch and elaichi for everyday cooking, and keep a small pack of ground spices like haldi and garam masala for convenience.

How to Make Peshawari Kahwa at Home

Boil 2 cups of water with 2 to 3 crushed green cardamom pods and a small piece of cinnamon for 3 to 4 minutes. Turn off the heat, add 1 teaspoon of Peshawari kahwa, cover and let it steep for 2 minutes. Strain into cups and add honey or sugar to taste. Some people also add a few chopped almonds or a squeeze of lemon.

How to Use Spices

  • Tarka: fry whole spices like laung, darchini, elaichi and badiyan in hot oil to start pulao, biryani and qorma.
  • Curries: add haldi at the start for colour, and garam masala at the end for aroma.
  • Tea: add elaichi to chai, or brew kahwa and lemon grass tea.
  • Homemade garam masala: dry roast kali mirch, laung, darchini, bari elaichi and jaifal, then grind.
  • Desserts: use sabz elaichi and jaifal in kheer, halwa and sheer khurma.

Health Benefits of Spices

  • Turmeric: contains curcumin, a natural compound widely studied for its antioxidant properties.
  • Black pepper: helps the body absorb curcumin from turmeric.
  • Cinnamon and cloves: rich in natural antioxidants and add flavour without extra calories.
  • Cardamom and kahwa: traditionally enjoyed after meals as a light, warming drink.

Spices are used in small amounts as part of cooking. They are food, not medicine. If you are pregnant or on medication, check with your doctor before taking large amounts of any spice or herbal powder.

How to Store Spices

Keep spices in airtight glass jars in a cool, dark, dry place, away from the stove and sunlight. Always use a dry spoon, because moisture spoils spices quickly. Whole spices stay fresh for up to a year, while ground spices are best used within a few months.
